A bulb thermostat uses a liquid filled sensing bulb inside the oven. As the oven heats, the liquid expands through the capillary tube and pushes on a diaphragm in the thermostat body, opening the contacts to switch the elements off at the set temperature, then closing them again as it cools. When the thermostat drifts or fails, food burns or undercooks, the oven overshoots the dial setting, never heats at all, or cuts out early. Fitting the new thermostat
Switch the oven off at the circuit breaker and let it cool. Photograph the terminal wiring and note how the bulbs are clipped inside the cavity before removing anything. Feed the new capillary through the same path without kinking it, clip the bulbs in the same spots and transfer the knob. Hard-wired ovens need a licensed electrician. Check the temperature with an oven thermometer afterwards.
