How an adjustable thermostat controls temperature
The thermostat senses temperature at its probe and opens its contacts once the set point on the dial is reached, then closes them again as things cool. That cycling keeps the heating element close to the chosen temperature. When it fails, the element may never switch on, may run flat out with no control, or the temperature may wander well away from the dial setting. Burnt terminals, a broken or kinked sensor line and a spindle that turns without any click are signs worth checking.

Fitting the thermostat
Isolate the equipment at the switchboard first. Most fixed catering and heating equipment is hard-wired, so have a licensed electrician fit the thermostat. Feed the sensor through the gland without kinking the line, tighten the gland so it seals, and connect the wires exactly as they came off the old one. Check the cut-off point with a thermometer once it's running.

Can I use this thermostat in a deep fryer?
Only if the fryer's existing thermostat has the same range. This one adjusts from 30 to 110°C, while frying oil normally runs hotter than that. Match the range on your old thermostat, or on the appliance's data label, before ordering.
