Why espresso machines need regular cleaning

Every shot leaves a film of coffee oil and fine grounds on the group head, shower screen, portafilter and basket, and machines with a brew unit collect residue there too. Left alone, the oils go rancid and give coffee a bitter, burnt or sour edge. Build up can also slow the flow through the shower screen and make the machine harder to keep clean. A dedicated cleaner breaks down those oils far better than water alone. This is a different job from descaling, which deals with mineral scale in the water system.
