Isolate the oven at the switchboard and let it cool. The thermostat is usually behind the control panel, with a capillary tube and sensing bulb running into the cavity. Photograph every terminal before disconnecting, and route the new capillary exactly as the old one went, without kinks. Clip the bulb back into its holder. A hard-wired oven must be disconnected and reconnected by a licensed electrician, and gas models need a licensed gas fitter.
