How an oven thermostat fails and what you will notice
The thermostat sits behind the temperature knob. A thin capillary tube runs from its body to a sensing bulb inside the cavity, and as the oven warms up the fluid in that bulb expands and the thermostat cuts the heat. Once the cavity cools a little, heating starts again. When a thermostat drifts or sticks you may find cakes burning at the stated setting, roasts taking far longer than they should, an oven that keeps heating flat out, or one that never gets properly hot. A knob that turns but changes nothing can also point here.

Replacing the oven thermostat
Isolate the oven at the switchboard or wall switch before removing any panels, and have a licensed electrician do the job on hard-wired ovens. Photograph the terminals and wire colours on the old thermostat, then trace the capillary to the bulb clips in the cavity and feed it out carefully. Route the new capillary along the same path, clip the bulb in the same spot and reconnect each wire exactly as it was. Check the result with an oven thermometer.

Can I bend the capillary to fit?
Gentle curves are fine, but avoid sharp kinks or crushing it. A damaged capillary loses its fill and the thermostat stops regulating. Coil any spare length loosely and keep it clear of hot surfaces and moving parts such as the fan.
