Gas oven temperature all over the place? The thermostat could be the cause
The thermostat is the gas control behind the oven knob. A sensing bulb sits inside the oven and is joined to the control by a thin capillary tube. As the oven heats, the bulb reports back and the thermostat turns the gas down to hold the temperature you selected. If the bulb or capillary is damaged, or the valve inside wears, the oven can run much hotter or cooler than the dial shows, burn food on a normal setting, take far too long to come up to heat or struggle to keep a steady flame on low settings.
