When a fridge thermostat stops cycling properly
This is a mechanical thermostat. A capillary tube senses the temperature, and the switch snaps its contacts open and closed to start and stop the compressor at the level set by the knob on the butterfly shaft. If the contacts stick closed, the compressor runs without a break and food freezes. Stuck open, the compressor never starts and everything warms up. A thermostat that has drifted causes long run times or a cabinet that's never quite cold enough. A quick check is to turn the knob from off to coldest and listen for a clear click.

Fitting the thermostat
Unplug the appliance before you start. Note where the capillary tube is clipped, as the sensing end needs to go back in exactly the same spot to read correctly. Move the two wires across one at a time to the matching tabs, avoid kinking the capillary, then refit the knob on the butterfly shaft and check it clicks on and off.

It's the flat, wing shaped spindle the temperature knob pushes onto. Check your old thermostat has the same style of shaft, because knobs made for round or D shaped shafts won't grip it properly.
