An energy regulator, also called a simmerstat or infinite switch, controls an element by switching it on and off in cycles. Turn the knob up and the on periods get longer, turn it down and the element spends more time off, which is how a hotplate holds a gentle simmer. The contacts inside wear and burn over time. Common signs are a hotplate that only runs flat out, one that will not heat at all, heat that cuts in and out at random, a knob that turns without changing anything, or scorch marks and a burning smell around the controls.

Fitting a new energy regulator safely
Electric stoves are usually hard-wired, so this job should be done by a licensed electrician. Isolate power at the switchboard and confirm it is dead before opening the control panel.
