Gas cooktop knob stiff or flame hard to adjust
Each burner has its own valve behind the knob. Turning the spindle opens the gas path and sets the flame from high to low, and on most cooktops pushing it in also works the ignition switch. Valves wear with age and grease build-up. Common signs are a knob that is very stiff or spins too freely, a flame that won't turn down or jumps between settings, or gas flowing with the knob off. If you smell gas, isolate the supply, don't use the cooktop and call a licensed gas fitter.
