Gas burner won't stay lit? Suspect the thermocouple
With the flame burning, the thermocouple tip heats up and generates a small voltage that holds the gas valve open. If the burner goes out, the tip cools, the voltage drops and the valve shuts off the gas. A worn or damaged thermocouple produces too little voltage, so the classic sign is a burner that lights while you hold the knob in but goes out as soon as you let go. Burners that cut out randomly mid-cook, or a tip that has been bent out of the flame, also point to this part.

Fitting must be done by a gas fitter
In Australia, work on gas appliance safety devices must be carried out by a licensed gas fitter. They will turn off the gas and power, route the new thermocouple along the same path as the old one, and tighten it into the valve without overtightening. The tip must sit in the flame correctly, and the burner is then tested to make sure it stays lit and shuts off when the flame goes out.
