Each knob slides onto the shaft of a switch or thermostat behind the control panel, and the shaped hole inside it grips that shaft so the control turns when you do. Heat, cleaning sprays and the odd knock can crack the plastic around the shaft, and once that happens the knob spins without moving the control or pulls off in your hand. People then reach for pliers, which damages the shaft and the panel. A worn or faded marker also makes it hard to tell which setting you've selected, which is a safety concern on a cooker.

Swapping the knob
Make sure the cooker is off and cool. Pull the old knob straight off its shaft without levering against the panel. Match the shape of the hole in the new knob to the flat or key on the shaft and press it on until it sits flush. Check it turns smoothly through every setting and comes back to off cleanly.
