Frost-free fridges warm the evaporator coil every so often to melt the ice that builds up on it. This sensor sits on the coil and tells the control when the ice has cleared, so the defrost heater can switch off. When it fails, the defrost cycle can stop working properly. Ice packs the evaporator, cold air can't circulate, and the fresh food section slowly warms even though the freezer may still feel cold. Heavy frost on the rear panel inside the freezer is a classic giveaway.

Replacing the defrost sensor
Switch the fridge off at the wall and move the food to an esky. You'll usually need to remove the rear panel inside the freezer to reach the evaporator, and any ice there must be fully melted first. Clip the new sensor onto the coil in the same spot as the old one and route the harness exactly as before. Give the fridge several hours to cool down before restocking it.
