Why a damaged wok burner cap gives a poor flame

The inner cap rests on the central flame spreader and forms the top of the small inner ring of flame. Gas rises through the spreader and leaves through the gaps around its edge, with the cap stopping it from shooting straight up. If the cap is cracked, warped, chipped or missing, the inner flame turns ragged, lifts off the burner, burns yellow or won't light cleanly, and the burner can get noisy. Caps are often dropped or knocked about in the sink while being cleaned. A clean, flat cap seated correctly brings back a tidy blue flame.

Fitting the new wok cap

Make sure every burner is off and the cooktop is completely cold. Lift off the old cap, wipe the flame spreader underneath and check its slots are clear of food and cleaning residue. Sit the new cap squarely so it drops into place and doesn't rock. Light the burner and look for an even blue flame all the way round. If the flame still lifts or burns yellow, have a licensed gas fitter check the burner.
