Fixing a Belling wok burner that keeps going out
This thermocouple is the flame safety sensor for the wok burner. Heat from the flame makes it generate a small current that keeps the gas valve open, and if the flame is blown out or fails, the valve closes within moments and stops raw gas escaping. A failing one causes a burner that will not stay alight once the knob is released, a flame that cuts out on low settings, or a burner that needs the knob held in for longer and longer before it catches. Corrosion on the tip or a damaged lead are common causes.

Installing the thermocouple
This is a gas safety part, so have it installed by a licensed gas fitter. The gas supply must be shut off and the power isolated before the cooktop is opened.
